Q: It doesn't state whether this is soft, firm, or extra-firm? which is it and are the organic options available in extra-firm and soft?

This product is soft and perfect for making pudding, salad dressing and works well in smoothies. Recently the non-soft tofu is not available in firm or extra-firm. I hope they bring it back!

Q: Can I use this in a cold breakfast smoothie?

I have never done it before but it will be okay. This products are really good!

Q: Is this soft or firm silken organic tofu? All the other silken tofu by Mori Nu notes it on the label, but not this organic silken tofu.

It’s soft - I use it for smoothies.

Q: Can we use this organic tofu for creamy dressings and puddings?

I use it all the time for dressings and sauces. I blend the tofu and use by itself, or I blend the tofu with 1/2 cup salad oil to make something more like creamy mayonnaise. By itself or with oil, it is great for creamed sauces. Blends in under a minute. Add seasonings to taste. It adapts well to seasoning.
