Q: Will these work on an electric stove?

Absolutely. I have an electric stove and have had no problems at all. Love the cookware. The only concern: do not use aerosol cooking spray on the non-stick surface since the propellant can erode the non-stick coating. I bought an oil pump sprayer on Amazon and just fill it with extra virgin olive oil for use on these pans and my air fryer.

Q: What is the metal square thing with holes for??

You put it in the deep square pan. You put water or broth down in the pot. Put the square thing with holes and put vegetables on it to steam them dont forget to put the lid on or you can steam fish
