Incredible Value
I started cooking for my Mother's catering business at 10. I've had a knife in my hand since. My collection is rather eclectic, with some Henckels Cronidurs sharing space with Masamotos and an assortment of favorites that are older than my children. If Betty Ford had a wing for knife addicts, I might consider rehab. I wanted to try a Santo knife so I took a flyer on this one. Very pleasantly surprised.It's got some decent heft, is balanced extremely well, and the handle fits nicely in my hand. Came quite sharp out of the box, and with a little touch up on a fine stone, took a razor edge immediately. Holds it well too. A quick honing and it's back to perfect. Most importantly, it's an excellent production knife. You can go for hours without getting tired. Very good as a general purpose knife, but an excellent vegetable prep tool. The relief on the blade does actually prevents wet potatoes from sticking like a vampire at a blood bank. It also makes paper thin onions and fine dices celery bunches, and everything else, in minutes.Quite popular too. It's the knife everyone seems to be reaching for; I have to keep an eye on it.

Amazing knife! My first Damascus Knife ever... (video available)
This is such a treat for a college home cook like me. I prefer cooking whenever I can but what has been limiting my skills has ultimately been the knives my family owns. Well this is a Japanese Damascus Steel AUS-10 Knife. I am absolutely pleased with the overall construction and build. When I first took it out of the included box, I am marveled by the layers of steel forged together and the hammered finish was a delightful touch. The ergonomics was amazing as it balances right at the bolster of the knife and the grip is smooth to the touch. I highly recommend this knife to anyone who is serious enough to further their own cooking, as a cheap knife will cause serious injuries do to the fact that it wears out extremely fast. Of course, this knife will eventually require sharpening which is why I would recommend getting a 1000/6000 grit whetstone as that would maintain the sharpness of any kind of blade. The blade is 8 inches long which is the most optimal length for most tasks in the kitchen and the blade itself has a Rockwell Hardness of 62 (HRC) and will last very long till you will need to sharpen it once again. If you are getting this for yourself or as a gift to those who cooks, I personally think this is a great gift to yourself or whomever. I do want to make an extensive review of this knife, so I will make a follow up within a month just to explore what are the pros and cons.

Great knives!
I wish I found these before spending over a $1700 on Shun knives. The quality, fit, finish and comfort of these knives are awesome. This carving knife not only gets razor sharp but holds the edge well. The handle is a linen micarta which isn't listed in the description (NO idea why they wouldn't list that) which was a welcome surprise along with the outside layers of the San Mai construction of the blade being a beautiful ladder pattern Damascus. I would have guessed the price of this knife to be over $200 if asked what I thought.

Fantastic Performance
The AUS-10 steel optimally balances great edge retention with being easy to sharpen. The Damascus construction doesn't add to the durability, but it looks damn fine. Combine that with the wood-like effect of the ultra-durable G10 composite that the handle is made of, plus the silver trim and full tang. Wow. The knife is made in China out of Japanese steel, and they did a fantastic job at it. When it came time to resharpen mine, I changed the blade to a total 18 degrees angle, and it still performs wonderfully. Very easy on the hand. I do a lot of cooking and this is my go-to knife (personal preference for paring knife over chef's knife).

Knife is like a razor with a quality feel
This knife is amazing! I scored a used like new deal for under $30 and I feel like I won big time, like hitting on a slot machine on the first pull after someone just walked away from playing 😀. But back to the knife review. This thing is razor sharp I was cutting garlic like Paulie in goodfellas! So sharp I can cut a grape by dropping it on the blade. Great feel nice weight and looks beautiful too. All in all I'm EXTREMELY HAPPY with my purchase

A versatile workhorse of a knife.
Thick, sturdy, well balanced, & razor sharp, this knife is complete. The non-stick blade is phenomenal & holds its sharpness. Its more of a hybrid design between a traditional chef's knife & a santoku which makes the knife more versatile in the kitchen. Absolutely perfect. This ones a keeper.

a sharp slicing knife
I haven't used it yet, but I'm disappointed that it's as wide as it is. It looks like a chopping knife, not a slicing knife.

Quality workmanship
I bought the set of four. These knifes are a beautifully made with high quality materials. I am almost hesitant to use them and instead display them as the work of art that they are. Initial tests using print paper shows they cut like a razor blade. I then compared them to my old knifes and made me wonder how I was able to work with them for so long. They come in beautiful boxes that make great elegant gifts. I can't say enough about these knives. Very happy with this purchase.
