Great GF cake mix that does great Egg Free too! I cut the mix in half and make 7 or 8 cupcakes, adding 1/4 tsp of Baking Soda and Baking Powder for each egg (1/4+1/8 tsp for half the mix), and add 1/3C water in addition to the milk. 325*F Convection, 18min. They are FANTASTIC! My entire family loves them.

This cake was for a birthday cake. My family was happy with the taste. It tasted mostly like normal yellow cake. I did not like how a plum of powder dust goes everywhere when you open it and pour it into bowl. That is more dust than any mix I have ever used. It was a bit odd to make I chose to do the 8 inch round pans it says to use 2 pans. When you do this the batter is barely covering the bottom of the pan but it did cook thoroughly in the suggested 26 minutes. It was very thin so I had to make 2 bags of this which then made 4 thin round 8 inch cakes … I then used 3 of those to make this round cake pictured. I would buy again it is better than then all other brands I have tried.

Why did you pick this product vs others?: I decided to try this gluten free mix because I've heard of this brand and the flavor offering for yellow cake. I also liked that it is in an easy pour bag, easier to store in a camped pantry space! Quality: The cake mix came out really nice, springy, slightly moist and has a great taste! I would order again from this company, now that I know the quality is as advertised. I do wish that it made more than 15 cupcakes in the mix.

Aquafaba worked well in this recipe as a vegan egg replacement. I used 1/2 cup + 1 Tbsp and mixed it until foamy (but not stiff) before adding. I had to add extra milk for the batter to be a pourable consistency, although it may be because I over mixed the aquafaba. Proceed slowly when adding the milk in case adjustments are needed. The result was a batch of very white cupakes that tasted similar to angel food cake. Delicious!
