A beautifully presented cook book.
This is one of the best cook book I have purchased. We have tried a lot of the recipes and they are so tasty and they don’t use too many ingredients, which is great for an amateur like me! Gorgeous book - perfect as a gift!

An American writing a book on Italian food...
This was a present to me and frankly my girlfriend who is Italian rapidly became offended. We live in Europe and already all the measurements were quite frustrating to convert each time. We tried a couple of pasta recipes but they were nothing special. I wouldn't recommend this book if you are not American. I also think some of the original Italian recipes have been butchered and Americanised and I am not saying this because it is vegan.

Beautiful book but just too weird and over the top about the ‘vibrations’ in the food etc. I am interested in the recipes but I think I’m too old to be a hippy.

Overly large
Book is large and cumbersome, pictures and text appear rushed. No flow to book. Returned. I love the Rich Roll podcasts but there are much better plant powered authors / chefs out there

Wunderbares Buch von zwei meiner Lieblingsmenschen. Köstliche Rezepte, wunderschöne Fotos und inspirierende Geschichten. Zwar kann ich mir den Retreat nicht leisten, aber durch dieses Buch komme ich dem Retreatfeeling schon etwas näher. Die Podcasts der beiden sind auch sehr empfehlenswert!

Could not wait for this book to come out - I own their previous two cookbooks but was very intrigued by this as though I do like Italian food; it’s something I rarely eat as it tends to be heavier, more carb fare which does not make me feel great - but a lighter plant based version- why heck yes ! Now going to rip the bandaid off at the beginning and tell you that all their cookbooks require a really good high speed blender and a dehydrator. You can get by without these - or at least the dehydrator, but there are several recipes you will have to skip - that said this book centers around common easy ingredients that are easy to find which is fantastic. The book is divided into 7 chapters : Blends and breakfast ; Sauces, spreads and cheeses; Pizza, Antipasti and Contorni; Pasta and Primo ; Salads and soups and finally desserts. I started out simple in giving some of these recipes a try : A version of chia pudding, as it in various forms, is a breakfast go to for me. The ingredients did not scream Italian - cardamom and coconut seem more Indian to me, but it was very delicious and simple to whip up - and its a great boost of energy to start the day. I made some of the cheeses ready for the weekend - again I started simple though I cannot wait to try the Burrata recipe as I love that cheese but am very curious to try the dairy free version - the Parmesans with cashew and walnut were easy to whip up with on hand ingredients as I always have nutritional yeast in that pantry . Other than overnight soaking of nuts , they take mere minutes to make and are a great addition to many of the recipes. There are a bunch of great looking pizzas all made with a simple cauliflower crust but my favorite section was the antipasti as I love little dishes like this and already made the blackened balsamic cauliflower, largely because I needed to use my cauliflower and also because again it was so simple which is something I look for in most recipes. There are lots of lovely and creative dishes that can be used as sides or whipped up together for a simple weekend meal. The only thing I guess I did not care for was some of the recipes looked amazing like the truffle cashew Alfredo but then were paired with a store bought packet of fettuccine noodles ; but I think a trip to Trader Joe’s will help as they have things like cauliflower gnocchi that I can use to lighten it up. The sauces however look amazing !! I just wish there was an idea of something else you could use in lieu of store bought pasta The book has amazing salads and soups but save room for dessert as that section is amazing and I have to make the caramel brûlée with just 6 ingredients and dairy free to boot. They take all your traditional Italian desserts and make them plant based - delicious but healthier! The book is beautiful and could honestly serve as a coffee table book as much as a cookbook . It has stunning photography, incorporates great stories within the pages and has so many incredible recipes!! What a great book!

I saw this book on amazon for $11.88 and thought what do I have to lose, Rich Roll is a sure bet. More appropriately, so much to gain!! This cookbook is absolutely stunning, simplistic and the recipes...., so many pastas, pizzas and risottos. Some of the recipes may require a little extra step or two (to make the vegan cheeses), but oh so worth it. The is a must own for any vegan kitchen.
