Azure Standard’s Unifine flour is milled at the Azure Farm Mill in Dufur, Ore., one of only a few such mills in the world, and family owned. The name “Unifine” comes from the milling process itself, where it takes just one step (uni) to produce a very fine, uniform consistency, while also preserving the natural nutrients of the grain. With Unifine Milling, the grain enters a high speed rotor with a single-pass impact system that instantly pulverizes the kernels with little heat involved, bursting into fine flour at a cool temperature.
