Will this bounce if cutting on center of a stud?

Assuming that you want to make a vertical cut (up and down or lengthwise), it would bounce. I love these blades, but that is not the way I would use them, that is directly over the stud.

I need to demo a bunch of walls covered in wallpaper. Anyone see any issues?

These are intended to cut into drywall without hurting wiring or studs. If by demo you mean remove the walls and reframe, these won't work for you.

Has anyone used this blade on cordless reciprocating saw like a 12v Bosch or Milwaukee for cutting through drywall and cement backboard? Results?

When the blade is used on a plaster wall, it does bounce off the wall slightly if the user is new to cutting with it for the first time. Unlike drywall, which consists of the materials gypsum and paper, plaster is more of solid material, which is sturdy and is not consistently the same thickness as drywall. It is applied by a trowel, similar to how concrete and stucco are applied. Plaster does break apart and when demolishing from a wall, and will tend to flake off in larger chunks. It's not a matter of the blade not working on plaster, it's a matter of usage slightly different to cutting existing drywall. Either way, it might take a couple of times to get comfortably using the blade on plaster, and adjusting the depth of the blade by holding the gate of the reiprocating firmly against the wall and tilting the blade and gate for minimum/maximum depth.Bottom line, the blade is quicker than just using a hammer. The same issue of bouncing around on the surface would occur tremendously by using a longer blade that's either bi-metal, wood, or diamond masonry edge. Another way to cut plaster would be to use a masonry circular blade on a grinder, but the dust factor would be extensive. The Saf-T-Kut blade reduces the dust of all other methods by 60%-70%. But the best advantage of the Saf-T-Kut blade, is you don't have to worry about cutting a pipe or electrical wiring being the plaster wall.

Will these work with the new Makita drywall saw?

No. The Makita drywall saw is an awesome tool but does use a somewhat expensive custom blade. Good news is you can also use a three segment piece from a break-off utility knife blade.
