how do you adjust these to over 180 degrees?

Using the colored ring spin it counter clockwise to adjust angle of spray, the screw on top will adjust radius/spray distance

can these mount on top of metal tee-post, maybe with zip-ties?

If not installing in a pop-up spray body, hen you need to use a Shrub Adapter to allow it to thread onto 1/2" threads. Unsure of what your tee-post threads are though.

Can you screw these into a piece of threaded pvc instead of using a pop up sprinkler body?

They make riser attachments that thread onto 1/2" pvc to convert to 1/4" but other than that no. You would need 1/2" male threaded pvc fitting with 1/2" female by 1/4" male treaded. They would fit that way.
