1 tablespoon is 1 tablespoon. Whatever your directions say it is equal. Otherwise just trial and error. Adjust to personal taste.

Does it come in a glass or plastic jar?

Going forward, all units will be in glass jars. It used to come in a plastic jar.

Can it be frozen between uses? We'd probably need it only from time to time, and I'm sure it would expire before used up if it cannot be frozen.
