I'm an experienced cook and a former restaurant chef. I really had never gotten into pizza making, but decided it was time to make a real Neopolitan pizza. I watched all the YouTube videos I could and reviews of flour. This was the one I decided on. Yesterday, I was going to start early and give the dough a chance to rise properly. That didn't happen. I got caught up in business stuff and started the rise at 1:45 PM, hoping for just an adequate pizza for dinner.I made 2 medium sized pizzas. As expected, they didn't puff up around the edges as I wanted, because they didn't rise long enough, but what I didn't expect was that they were still crispy and light around the edges and the taste was VERY authentic and wonderful. It was almost like being in Italy again. I can't wait until I have a full day or more to let the dough rise properly. My family and I are never ordering pizza out again. Great product!

The bag of flour I received was only one month from the expiration date. Another brand I already had was dated beyond that. Worthless.Update:The owner of the company contacted me right away and assured me that this was not typical. He was concerned that this happened and immediately sent replacement flour that is high quality and very fresh, dated well into 2019 (6/28/19).I was impressed by the response. This is a very good company that will correct any problem that may occur, so I updated the rating to 5 stars. I would not hesitate to buy from them again.

I can't say enough about the lightness and quality of the pasta. Really happy with this OO flour. Have already ordered more. Will always keep it on hand...it's that good!!

Flour was not fresh. Nine dollars for a 2 lb. bag of flour and they give a person an old bag. I was told that they never had a problem before yet someone else posted a review stating that they had the same problem. I guess they do not read their reviews.

A hit pricey but definitely makes a difference when making your pasta
