I am a college student looking for a printer to have in the car with me to print essay, is this a good printer for that?

Yes this will work well for you. I use this printer commercially and have a fleet of 12 vehicles with this printer in it for printing out invoices. Depending on if you scan anything you maybe want to look at the 250 as it has additional features

Does this work with macs?

Yes, I have a MacBook Pro (approximately four years old) and it worked with my Mac, though, I've had to do a complete software re-working because it kept getting an error report after software updating. But, this seems to be a problem with the printer itself, not a mac to printer issue.

Would you recommend this printer for travel for copies at vendor events?

Yes, I think that would be a good use. You would probably want/need a backpack carry it in for such a use, as I think it would be a tad heavy to carry around all day in a handheld bag.

Does the basic printer come with basic ink? can i connect to an ipad using cables? type of cable? included? thanks!

Yes, the printer comes with both color and black #62 ink cartridges. I don't have an iPad so I can't say wheather you can hook it up using cables. However, you may be able to print using wi-fi. Also, the printer has its own e-mail address, so you can e-mail whatever you want to the printer and print that way. The printer also has its own screen, so you can check the ink and print a test sheet.
