Would this container be good for a thick dressing?

I find it works for thick dressings as well - it seems solid and not going to break!

Does it emulsify the vinegar and oil?

Yes, but not for long. Stir and pour just as you would with a regular shaker. A dressing made with a bit of mustard powder or other binders would stay in suspension longer as you would expect. No magic here, just a great, convenient, neat way to dress a salad at the table.

Is it dishwasher safe?

Everything but the cap is dishwasher safe.
