Can you adjust the pressure if you want to use it as a bidet sprayer?

Yes, there are 2 ways to adjust the sprayer pressure. One from the water tank where you connect the hose, there is a lever you can turn on or off your bidet. The second one from the sprayer itself on how much you push the sprayer lever.

Does this have everything I need or will I need additional supplies to hook up?

It has everything needed to make the spray work. You may need a wrench to loosen something on your toilet to attach the hose, but you don't have to run out and buy anything else.

How many feet long is the hose?

I'd say 3 to 3 1/2 feet. We connected it on the left side where the water supply comes in and brought it around the back and still have plenty of room to spray. I love it.

Can you lock the press in place or do you have to keep your thumb on the thing for it to keep going?

you have to keep your thumb on the "trigger" - there is no lock on function like a gas pump. Though you could use a rubber band if you really wanted it to be on, and could turn it off and on at the connection valve.
