Love everything about this chocolate
I love chocolate, and this is my new favorite. I use it in my coffee instead of sugar or sugary cocoa. I eat it raw, as well, as a dessert. Yes, it is a bit bitter and tannic, but there is nos sugar. This is raw chocolate. It is an acquired taste, and after eating for the past few months, I like the flavor of this better than any other surgery milk or dark chocolate.

Takes some getting used to
So after ordering and eating this, I seemed to think I that I might not like chocolate after all.I may have only liked chocolate for it's sweetness.Zero sugar 100% cacao is very bitter.Maybe I'll need to get used to this, it's going to take time 4 sure.If your used to sweet things you won't like this at all.

Sugar-free and delicious
I had been eating 85% cacao, about a half-ounce piece each morning with my decaf green tea. When I first switched to these Ghirardelli 100% cacao bars they seemed bitter. But gradually my taste buds adjusted and I began to like these 100% cacao bars. Now after about two months my morning half-ounce pieces taste delicious. My reason for switching was to reduce my sugar intake, which I have done also for some other foods that I regularly eat, and I have found it really possible to change my taste buds. I have read that sugars contribute a lot to unwanted weight gain, especially for persons like me who ate and drank many sugary foods and drinks when we were younger. Eating too much sugar apparently gradually causes insulin problems which can lead to weight gain unless dietary changes are made. So I recommend switching to lower-sugar chocolate, maybe starting with 70% cacao and then later moving to 85% cacao, and then to these 100% cacao bars, to get the full benefits of cacao without the sugar. The health food experts who consider sugar to be a toxin seem to me to be mainly correct, though small portions of foods containing sugars, such apples and oranges, surely have health benefits, and perhaps even very small amounts of honey or maple syrup. But for me, danish pastries and the like are foods of the past.
