High Quality Carbon Steel (will Rust)
I am a traditionally trained French chef and hold a Bachelors in Molecular Gastronomy. I see massively conflicting reviews on this knife. I have had it for quite a few months now. It is evident that a carbon steel blank was heated and forged into this knife followed by some grinding. Mine was straight and not curved like some of the pictures and the edge was decent right out of the package. After some sharpening and honing so that it was tailored to my liking (not necessary fresh out of the package, but I’m particular about the edge my knife has for daily use) being that it is carbon steel, it holds the edge very well, and even after some on purpose abuse on chicken, pork, and beef bones it has not chipped or broken. I must say that it is a high quality knife, it is heavy, and some may not like this, but I like a knife with some weight, and the full tang balanced blade is perfect for my likes. With all of that said I liked it so much that I’m back on here buying 2 more, one for my spare bag and one to give away as a gift for a chef friend of mine who quite liked this beauty (looks like the one from the YouTube channel where the man cooks out in the forest Almazan). It is carbon steel, and just like one of my $500 knives this $30 work horse will rust if it is not dried thoroughly and immediately after washing and use. A light coat of grape seed oil is rubbed on the blade and handle then is wiped off completely before it is stored away. Some people say oil goes rancid, but when you use it and wash it as often as I do, that is definitely not a worry. So far I’m please, yes it is more work to care for a carbon steel knife, but I never imagined such a well priced knife to be such a good quality item. If they steal or I break a $500 Shun in my bag I would be severely upset. If I break my Enoking, I would be back on here and get another and say it was the best $30 I’ve spent on a cheap knife that was of surprisingly good quality.

WOW! BUY THIS!
Just to preface, I'm an amateur home chef with solid knife skills, I know about knife care and technique. I'm no expert, but I've owned various knives and I can judge quality pretty well. Aesthetics: Very cool looking knife, nice packaging and knife holster. It also arrives oiled up, so least they take care with this knife. Only flaw: Two of the rivets on the knife handle stick out a little while the others are flush. It doesn't make it uncomfortable and thankfully they're not sharp. Performance: I was skeptical about this knife. There are tons of what I'd call "fad knives" flying around the internet and specifically ones that look like this. They know how to market to us making these rustic masculine looking knives, but man, this one delivers. I was in the market for a good vegetable knife. I tried a two reputable Nakiri knives and they absolutely disappointed, so I didn't want to try another one. The weight is great. I like a heavier knife, so that's strictly MY preference. If you don't like heavy knifes, then this isn't for you. I tested out cutting carrots, potatoes and onions and this knife glides through with little effort. I was especially surprised how easily I was able to cut through the potatoes. Because of how sharp and heavy it is, you don't know to apply a lot of pressure. I haven't tried butchering any meat yet, but I have a knife for that, so I'll probably just keep this for veggies. I just got the knife, so I won't know for a bit how well the blade holds up before needing to be sharpened, but honestly, even if it needs more frequent sharpening, for $30 I think you'll be hard-pressed to find a better knife. I've spent $50 and $100ish on Nakiri knives from well known knife companies that didn't perform half as well.

Surprisingly good Chef knife
Surprised that it was sharp too. It’s chopped meat and minced food well. Brought it to cut watermelon and found it cut through fish bones well too. All around a good chef knife, even though I have other good knives. I read something about rusting, but I been careful not to let it sit in water and drying it by hand.

Exotic aesthetic...Nice weight and balance

Finish is of an exceptionally low-quality finish on handle. Would prove painful over prolonged use

I was expecting something extra ordinary because the way it has been presented but unfortunately ended up with a big disappointment. The cleave blade connot hold third strike when I was trying to cut a lamb. You can use it for cutting vegetables nothing more than. Not recommended for camping purpose.

本日到着しました。試しにセロリを切ってみたところ、全く切れない。???と思い、刃先を指で触ったら、全く鋭利さがない。刃先が丸く、まるで子供用ナイフ。これでは切れるわけないです。アウトドア料理の動画をみて、すごく欲しくなり、楽しみにしてたのにすごく残念。しかたないので、小一時間かけて自分で研ぎ、少しはマシになりましたが、モチベーションダダ下がり。 高評価が多いので、この製品に決めたのですが、僕のは研磨工程が完了してないハズレ品なのか。とにかく残念で仕方ありません。ちゃんとした製品と交換して欲しいのですが、出荷国が中国なので期待できそうにないです。 決して安い買い物ではないので、すぐに買い直しもできず。

Had a few dings and a scratch on it when it arrived. Given it's a knife and doesn't hurt the functionality(minus the imperfections blowing the steel out which is highly unlikely but plausible) it seems like it should be a decent knife. Guessing that's why it was on sale. If it happens to drop to that price point again I may grab another and just use this one as a camp knife if the other shows up in better shape. Was hoping to give it 5 stars but minus the shape it showed up it should be a 5 star review for most.

Good sharp knife when it arrived, I love the weight and comfort my only issue is the blade chipped on bone when I first recieved. I have had this knife for years and it does keep a good edge with care.
