The video shows the mesh sitting on top of the chips. I thought it was the other way around. What’s the difference?

The mesh is to hold the chips in place during the burning and to help keep any fly away embers from happening. The mesh is to go on top of the chips

does the smoker get black after a long time use?

The inside of the smoker will become charred over time due to the burning of the fuel
