Jose Andres Foods Pedro Ximenez Sherry Vinegar, 8.45 Ounce

Love it. I’ve used this in main dishes and soups (mostly in dishes which called for some sort of vinegar like Apple cider vinegar) and this seems to be far superior giving a depth of flavor the folks try my food love. They are hard pressed to figure out my secret sauce until i tell them.

I don’t especially like the bite of white wine or ACV, even in small amounts. So, on the recommendation of Bon Appetit, I decided to replace other vinegars in recipes with sherry vinegar. This one had so many good, detailed reviews that I felt confident in spending this much $$ (on VINEGAR???). It’s definitely worth the $$. Mellow and a little nutty, I’ve used it in a dressing for roasted vegetable salad and another recipe (will add name when I find it) and both were considerably elevated by the substitution. It enhanced the natural flavors but didn’t overwhelm them. Bottle arrived intact, no leakage.

I love Jose Andres, so I decided to try his gazpacho recipe which called for this ingredient. I bought it -- and I hate it! Using something much less bitter.

I originally bought this for a savory recipe but remembered using balsamic vinegar over vanilla ice cream with strawberries. Now I’m typically a chocolate person but every so often crave a different flavor. This vinegar, using only a couple of teaspoons over about a cup of ice cream will do, although I never measure. The tangy tartness with a quality vanilla really hits the spot!
