Q: What are the dimensions with legs opened? Need to know if this will fit across on the stone ring of my fire pit.

The grilling surface is 16 x 10 inches. The legs are not much wider than that when opened

Q: Has anyone found a way to make it a little more stable? I see a lot of videos showing how it moves side to side due to the legs coming straight down

Not yet, still working on it. They do wobble some.

Q: what do you put your charcoal in?

If using charcoal, or embers from a wood fire, you just clear a spot on the ground of combustible litter, then lay a shallow bed of coals. Adjust the legs of the grill to the height you need above the heat, set the grill on top, and get cooking. A short metal shovel and welding gloves are nice, but I have done fine without them, using sticks to move the grill or coals if necessary.
