My go-to utility kitchen knife
I bought this on a whim to make life chopping vegetables and trimming fish a little easier (as I'd read the knife was good for that). It is the expected high quality you'd expect from Sabatier. It was smaller than I expected. With only a 5" blade it feels more like a long parring knife than something more weildy like a Chef's knife. But, it is actually pretty versatile and I've ended up using it for nearly everything! (It even does a good job slicing cheese!) It has a good weight and balance to it, and feels comfortable to use. For a large cut of meat, I still reach for my larger Chef's knife but for anything else I prefer this to all the rest of the options in my knife block! I'm tempted to buy a longer version too (7"-8") to complement it.

Good for the price. Needs constant sharpening.
Good knife for the price. It blunts very quickly but a better steel is going to cost a lot more. Does a decent job as a kitchen utility knife with frequent sharpening.

Great value great knife
This knife is well designed and cuts beautifully. For the price it’s incredible value. It’s comfortable to use but the handle is a little short for perfect leverage but it is well balanced with the length and weight of the blade. I have noticed some rust if left to dry in the drainer, so I would recommend drying immediately to take care of this excellent santoku

The best general purpose kitchen knife?
Two years on, this is probably the best general purpose kitchen knife I've ever used. Still razor sharp after just a couple of swipes along the sharpening steel. Cuts meat without effort. Slices tomatoes without squashing them. Comfortable to hold. Beautifully smooth ergonomic handle. It's a pleasure to use. Far superior to another low price "Sabatier" knife that I brought recently.

Rusty??
So I've had this about 3 weeks, I've used it often, and yes it comes quite sharp, however it must be made of lower quality steel as it rusts even when left in a drawer, I nearly cut my finger off trying to scrub the rust off. Sad to say not very good quality, if you want a knife that'll last go and buy something with a higher price tag or a more reputable brand, please please please don't buy this because of its price you'll end up throwing it away soon after.
