How much water can it actually hold under the steam rack?

I believe it holds 2 qts. You will need to check it through out the steaming process but I have found that if you put a penny in the bottom, it will start "rattling" if it needs more water.

I dont understand the deminsions. 15x13x15 ?? Does the pot flare at the top? Or is it just 13 at the bottom and 15 tall? Thanks

I normally place tamales vertical for steaming, so approximately how many tamales will this pot hold?

I usually get 7 -9 dozen per pot, depending on size. My tamales are big and full of meat too.

Can i use this as a stock pot???

"Absolutely", It can be used as every thing I hoped it could do an more including canning as I grow my own vegetables. As well as, I love sea food an can steam cook as little or as much as you want ie: a five family reunion ! You will not be disappointed
