Roasting: A Simple Art

Disappointed
I really bought this because my cookbook that was passed down from my mother to me finally fell apart. Unfortunately I didn't take down authors name or books name to try to replace thinking it would be easy to get another cookbook with this info.This book failed. It appears it might have some good recipes, but you can't find in index : roasting timetable for "Stuffed Chicken or Turkey" . All you can get is her recipe with her roasting temperature and time for her recipe. How about a general guideline would be nice.

Best cookbook for beginners and experienced cooks alike!
Wonderful pictures, wonderful method, wonderful text, wonderful results! Ms. Kafka is an insightful cook who offers not only virtually foolproof recipes but strategies for menus, leftovers, home dining and entertaining. If she says something is important, it is. If she tells you not to bother with one thing or another, don't. Trustworthy, like the best mom in the world teaching you how to make magic in the kitchen. Just be sure to stock up on the protective gloves and figure out how to keep the smoke at bay. (I use a fan perched on a box aimed at the stove and the window, opened wide, beyond.) If you take the smoke detector batteries out, make sure you put 'em back in for safety!

Trying to be Barbara K
I lent my book to a neighbor and months later she said "thanks so much for the book." A few weeks ago it wasn't on my shelves anymore and that neighbor is long gone. That's why I don't lend books! I love this one. A significant tome, it is a reference for a lot of cooking I do. Tonight I've heirloom carrots to roast, whole, in garlic and olive oil. Thank you, Ms. Kafka, for giving us slow and fast-roasting temperatures and ideas and a reference book for all time. I'll refer it to people as I have in my blog years ago as a key reference book, but will not lend it to a transient neighbor ever again.Sorry, I thought this was my Amazon account. It's my husband's but he just got me another copy of the book and will be credited with the review.

The best roasting book
I purchased this used for my son after he starting trying out recipes when he was home visiting. It is a great, basic book on roasting.

thoroughly covered topic
I really liked the thoroughness of the book's content. It was a dense read. The book dealer sent me a damaged book at first but promptly replaced it. This book is for advanced cooks.

Needed in every cooks library
Truly there is no better book on roasting. Even if you are not a "high temperature" cook this book has some of teh best recipes there is for roasted meat, poultry and veggies. Try the "spiffed up stuffing" the best!

I have owned this cookbook for a decade. It has been a decade of perfectly cooked meat! I buy used copies for my friends.

Profoundly changed my relationship with the oven
I learned to cook in my teenage years, and learned a lot of things from my parents, my grandmother, and from cookbooks. However, I have never come across a cookbook that changed my outlook on cooking more than this one. After hearing Barbara Kafka on the radio, I bought a copy as an impulse buy. After reading the book and trying out a couple of recipies, I was hooked. It is the only cookbook that I proselytize about, and I have provided copies to several family members and friends. Perfect meats and vegetables - every time. Juicier meat than I ever had been able to cook in the oven before. A profound change in the way I prepare foods.Try it - you will never look at your oven in the same way again.

Know it's a high heat approach mainly - just don't be afraid!
I am a true fan of very high or low heat cooking. This book simplified my life. I would only use high heat cooking for a full roast chicken - was I ever a chicken! Some feel this book may repeat a system for so many things that are the "same". I look at it as simplifying my life- and to think it was written so long ago! My copy's cover came in less than new, pristine condition, but the book quality (pristine ) was excellent. Order it, it will blow your mind. Oh- to prevent alot of fat splattering, put cut potato pieces in the pan at the same time. They will really help prevent splattering, and, besides, I'm a fat roasted potato lover anyway. This and Sous Vide have changed my life.

Cookbook arrived covered in what looked like jam and bread crumbs
The book itself is very interesting. That is, after I had to wipe off all of the sticky residue on the front and back covers that looked like jam and bread crumbs which was utterly disgusting. By the way, this was a “new” book, not used. Very disappointing.

Great recipes using high heat when roasting
I am a collector of cookbooks and I value the recipes in this book. I am certain I will refer to it often when wanting great results from roasting.

Arrived on time. Book was in better condition than I expected. Very happy with this purchase.Btw, this is an excellent cookbook. I highly recommend it.
