Basic recipes for vegetarians
This has quickly become one of the foundational cookbooks in my kitchen. It contains all the helpful basics like how to roast various vegetables, make your own sauces and dips, and make delicious plant-based recipes. There are also plenty of complete meals that come together quickly - a rarity when cooking from scratch! I love the tips on how to use leftovers, too. And most of the recipes contain variations that allow for special diets, such as vegan or gluten free. It pairs perfectly with the original Love & Lemons cookbook.

Great Plant Based Options
Beautiful pictures for every recipe.No bizarre ingredients.Lots of fresh fruits, vegetables and herbs.Very plant based (YAY!!!!!) and again no bizarre ingredients. And not tofu, tempeh, soy overload (blah!).Easy to follow directions.Over 100 yummy, delish recipes.For those veg and vegans their is the occasional use of cheese, yogurt and egg. However, there are vegan substitutes suggested when possible.Delish cheese substitutes, and not the tasteless cardboard crap.Stumbled across this author when I googled how to cook spaghetti squash (it had been a while) and found Spaghetti Squash with Kale/Chickpeas. OMG!!! This was so DELISH. I loved this dish so much I've been making it once a week. Tag favorites.This author's website is awesome. There's a picture of all the ingredients to be used as well as the dish with easy to follow directions. Beautiful photography. Makes me hungry and want to rush to my kitchen to make these recipes.Because this cookbooks focus is more plant based recipes it was my first choice and I wasn't disappointed. So often times I buy a plant based cookbook and it's full of tasteless recipes, over abundance of soy, or everything is covered in sriracha for flavor. Extremely disappointing. This book was a refreshing pure delight for this plant based girl.This is the author's 2nd cookbook. Her 1st looks to be as much of a winner and one I'll have to try.I consider this book a read in progress because I have so many recipes still to try.Happy eating!

Chock full of innovative yet simple to prepare plant based dishes
Let’s begin but stating that this is a big cookbook loaded chock full of recipes- over a 100 which would make it a great choice for anyone looking for a comprehensive guide to a mostly plant based diet ( note it’s not vegan as it does include eggs and butter in some recipes ) or a beginner book.After beginning with some guides to plant based protein, grains and legumes, managing waste and some basic tips, there are ten different chapters : Breakfast; Snacks and Starters; Soups; Salads; Dinner; Side Dishes; Desserts; Drinks; Homemade Extras and Essential Sauces and Spreads.The thing I like most about this book is the fact that it keeps it simple in terms of ingredients, recipes and equipment needed which makes this book accessible to all. It is simple to follow and many recipes are very quick to prepare.One of my favorite chapters is the snacks and starters as there are so many simple ideas that are easy to whip up: a beet dip, easy to make almond cheese, queso made of butternut squash. There are also a great selection of unique soups such as lemon miso spring greens and lasagna soup with vegan ricotta. There is also a great idea to make stock with left over scraps.There are some innovative salads that are perfect for the summer and not the typical ones you sees in other cookbooks. And the same applies to the main dishes and sides - they are not the usual run of the mill and are dishes I want to make! I included a picture of the cauliflower gratin which was a quick make and delicious. It is a side but I found it filling enough to use as a main.Among the desserts is a great page full of little data balls you can make to keep on hand and there are just enough recipes which I like as many vegan books seem to be over indexed in this area. This is followed by a great drink section which contains both alcoholic and non alcoholic drinks and I love the section on extras - vegan ricotta salsas and simple snacks, sauces and dips.This is probably the most innovative vegan cookbook I own; that wins this with simple ingredients and recipes. It’s loaded with bright, colorful pictures to demonstrate the end result and is a book I will use often.

A must-have vegetarian cookbook!
I am IN LOVE with this cookbook! Since I got it, I've tried multiple recipes, and my favorites include the Flourless Almond Chocolate Chip Cookies (vegan & gluten-free!), the Potato, Leek & Artichoke Chowder, and the Kale & Sweet Potato Lasagna Roll-Ups. Everything has been super flavorful, healthy, and satisfying, and my family and I can't wait to try more recipes from it.I also love that this book is an incredible kitchen resource, as it includes guides for roasting & grilling vegetables, making quick salad dressings, cooking grains & legumes, and more! It has made me a better and more creative cook, and it really has recipes for everyone. Even if you're not vegetarian, you'll love this book's beautiful design and bright, flavorful recipes. Many of them - like the Chimichurri Potato Salad, Sheet Pan Squash Soup, or the Grilled Romaine Caesar Wedges - would be great served with meat. And if you're on the other end of the spectrum, there are vegan options for almost every recipe.I can't recommend this book highly enough. I plan to order it as a gift for my mom and sister-in-law this spring - one is a vegetarian, one is not, and I think they'll both love it.

Great gift!!
I love anything lemon 🍋 in the summertime when it comes to food! This recipe book had it all to try! Everything I’ve tried has been so yummy and surprisingly easy to make. Great gift as well with a little bag of lemons.
