Great KNIVES
Yeah, I bought this - paid an ungodly amount of money for it - 3 times what the competitor I was looking at. Why? Well, I already own over 18 knives from Dalstrong and trust me - these things deliver. Dalstrongs customer service is second to none in my opinion. They have fixed a couple of issues that I have had without question. My father was a butcher and because of this I believe thatI know quality when I see it. Dalstrong has what I have become to believe is a great product at a reasonable price. Can you get good blades cheaper - yes. Can you get better quality cheaper - I do not think so. I am sticking with this brand!

It’s worth it!
My first DALSTRONG.Was thinking about a slicing/carving knife and came across this one… spendy, I thought… Shogun Series…? Did some digging and watched reviews. I’ve always loved being in the kitchen and recently made a beef roast I wanted sliced thinly for sandwiches, my regular chef’s knife was coming up short in all ways concerned (pun intended)! You need to know, that if you are looking at this knife, and wondering like I was, “is it worth it?” I’m here to tell you it is.The 14 inches is not ‘too’ long for slicing meat, or carving. In my opinion 12 inches would be a compromise. The decision is yours my kitchen/culinary friend. If you are here reading the reviews, you need this knife.It’s absolutely worth it, you are worth it! It will be your DALSTRONG Shogun Series slicing/carving knife for the rest of your life… enjoy cooking, amazing.Packaging, presentation and craftsmanship are amazing. Double boxes surround your knife inside it is sheathed in it’s own protective durable sheath, and cradled in protective dense foam, form fitted just right.

my favorite of the shogun line
This is my favorite knife of the Shogun set (though I don't have the scimitar yet!). Some of the other knives do have some stiff competition and possibly/probably better knives in the same price range or better, but this is one of my favorites (along with the steak knives) and probably the best carving knife I've had. I have several expensive ones over the years but I've given some away, left some at holiday parties on accident, etc.This sucker is sharp and cuts some real thin slices. You could easily make see through tomato slices (In fact I cut a tomato into several dozen slices last night) with it and it works just as well on meat. Looks fantastic, blade was straight, bevel was perfect, handle is uniformly finished, sides are uniformly polished. Although I might not always reach for the Gyuto (it's pretty and a solid knife and I have used it some since I got it don't get me wrong, I just have several and some perform better. ) this slicing knife is better than one I have that is 3x the price. sucker just feels good and works. I was considering getting the carving knife that comes with the fork instead because I really wanted the fork, but I wanted this over the carving knife and I don't really feel the need to have both since a gyuto, boning knife, and slicing knife pretty much has everything meat related covered without the need for a carving knife.

It is so pleasing to find the quality is even better than I had hoped
I’m collecting a full set of the DALSTRONG Shogun Series kitchen knives. I’m not made of money so I had to be very picky with my choice. It is so pleasing to find the quality is even better than I had hoped! It is positively amazing what a difference quality blade makes! I especially like the texture of the hammered Damascus steel. It is smooth enough to be kept exceptionally clean but still has enough texture to keep wet foods from sticking when you cut them. The handle is exquisitely made and fits well in my hand. I can feel the exact angle of the blade and control it very easily. There is plenty of heft to balance the blade. A couple of strokes of the steel keeps it frighteningly sharp.This particular blade (12” Slicing / Carving Knife) gets used more than I thought it would. I always wanted a professional carving knife for use on the holiday turkey and ham but I found so many more uses for it! Anything you want precisely sliced is a dream with this blade. It was amazing when making jerky. Watermelon just dares you to make the next slice just that much more perfect than the last. Brisket sandwiches are actually fun to slice. The control I get from this blade is confidence inspiring!Overall, the blade has been an excellent investment and addition to my kitchen! I highly recommend this blade as well as the whole series!

Gorgeousness Defined! Usability Unparalleled!
I took my time when deciding upon my purchase of a Sujihiki knife. I considered a single-bevel style blade even though I am left-handed and most S-bevel knives are created for right hand use. I could handle it though I do prefer using my left hand for my knife work. I already own a Dalstrong Shogun-Series Najihiki knife which I absolutely love! So when I came across the Shogun 10.5" Tokugawa Sujihiki knife I bit. WOW! This knife goes way beyond " superlatives! " it is literally a "10.5-inch" SCALPEL! An exquisitely-balanced, superbly-designed Master-Craftsman class tool! To demonstrate the extreme sharpness of this piece of art to a friend, I placed a Roma tomato trimmed stem-end down on my cutting board and proceeded to slice paper-thin slices, one after another without ever holding the tomato to steady it. I handed the knife to my friend, who in his first time handling this knife was able to duplicate my paper thin slices. He asked "Where did you get this Beast?" Amazon, my friend, Amazon! I gave him my Dalstrong card. Another Dalstrong-user in the making! 5-STARSUpdate 4/27/20 - Well I am so impressed with my Dalstrong Sujihiki Knife that I ordered two more, one for each of my sons. They are going to love them!
