What a great bread! I try to avoid wheat, not simply gluten (check the book wheat belly). That said, my wife and much of my family are Eastern European and I tend to favor that cuisine to our western diet. This extends to the breads which I prefer over the light fluffy tear apart stuff when your try to spread your butter or Vegemite... This stuff is solid, dense, and weighty and a little goes far. On top of the physical, the taste and quality are wonderful, I guess it can be said that I like my bread like I like my beer, dark, heavy, and substantial. Absolutely LOVE this bread and from this baker specifically. As the other reviewer says it's rich, thick, hearty and perfect! I've bought other makers breads but they would dry out/mold within a week, this bread keeps forever (not that I've tested that theory, I always run out too soon!). I eat this while following low sugar/low glycemic, paleo and keto-lite guidelines, i don't have the exact stats but I can feel the satiety and low glycemic index. I have ditched all other breads and flour based carbs for this and couldn't be happier. This will be the last and best black rye you'll try.
