Q: does this need to be refrigerated ?

Technically, no, but we do recommend it. It is shelf-stable, so it doesn't require refrigeration, but it will continue to dry out and harden as it ages. For best results, keep it wrapped and store in the fridge. We strongly recommend against freezing or placing it in an airtight container.

I didn't see any corn or corn derivatives on the label. And I didn't taste any. This is a meat product; the only reason it would have a corn product is as a filler--and the manufacturer prides himself/herself on making a pure product.

Q: What do I do if my package is spoiled and not good to eat

This happened to me. One bag was delicious and the other was spoiled. I went to Amazon website and they to "Returns & Orders" at the top right of the site. There are a few options. Amazon customer service was very polite and I was satisfied with a credit on my Amazon account. They agreed to have me throw away the bag of Sopressata that was no good.
