I want my builder to install these lights using a single light switch on the wall rather than with the uk plug, is it possible?

Yes. I put light switch in under the wall units and the plug is connected above powered off the switch. Also done so switch controls lights in glass units. Hated the plug and transformer on show.

I have purchased these and the wires from the lights are too short for my purpose... Is it possible to cut and extend these please

well yes, if you are confident in your wiring skills, you could easily cut the low-voltage (DC) side and extend the cables with soldered joints or even a terminal block, using a similar cable size. I suspect that you may void your warranty doing that

No it is not dimmable and is actually quite bright.

I have seen people say they just unscrew to fasten by screw,i have tried grip pads clamps and everything else but they will not budge, any help ?

It's aluminium, so pressure on any one spot will make it stick. To unscrew, make sure you grip it evenly around the edge. I used a rubber strip jar opener, and it unscrewed easily. Press it on two opposite spots on the rim, and it will be unlikely to shift.
