What type of pen is best to use with this if I want to do lettering?

I use self-moistening water brushes to do lettering with masking fluid - when the gum begins to dry, simply squeeze some water into the brush tip, and the drawing gum will slip off quite easily! I'd suggest trying it out with a Pentel Arts Aquash Water Brush, or if you have a tighter grip - like me :) - try an Arteza Water Brush Pens. Is this natural rubber latex or synthetic latex? we have an ige latex allergy.

This particular masking fluid is rubber latex, HOWEVER, Pebeo also makes a masking fluid that is synthetic which I have provided a link for you that you can also purchase from Amazon: https://www.amazon.com/Pebeo-MAGIC-Drawing-Masking-Bottle/dp/B01MXFWITL/ref=sr_1_9?dchild=1&keywords=pebeo+student+quality+masking&qid=1622161027&sr=8-9

Is this product flammable?

I do not believe so. I dipped a Q Tip into it and put it to a flame. It crackled and sparked and flamed up for a fraction of a second but would not hold a flame. I hope this helps.

Can this be used on resin coasters when gilding the edges?

I believe you could but would caution that the surface you apply it on should be smooth. If the surface has any engraving, grooves, etc., it may be a problem to remove the fluid from within the grooves.
