Everyday Mexican Instant Pot Cookbook: Regional Classics Made Fast and Simple

Seriously good, well thought out recipes. A step above other cook books in flavor, complexity, and cooking techniques.

This book has just become my favorite Mexican cookbook. Easy to follow recipes with a great variety of the food I like to eat. AWESOME BOOK

I own an instant pot but I don't use it much. I find that typically, instant pot cookbooks just add a can of this or that. I don't call that a recipe and I don't cook with cans of soup. This cookbook is real food. It's more work than just pouring a can of soup in the pot with your main dish. You won't find cans of soup in here. There are ingredients that I'm still sourcing at my local grocery store. It's a great cook book. You will save time making dinner, but you are going to have to participate in the cooking process. I like this book for those reasons. I think you will too.

I bought this when I purchased my InstantPot, because I had never used the InstantPot before even though I'm not new to cooking. I made the Pollo con Rajas and Pollo Adobado with ensalada de nopales, both turned out excellent. I read through the book when it arrived and I was pleased that the recipes were authentic. It's how my family likes to eat, since we have family from Mexico. The recipes use fresh, natural ingredients. I'm looking forward to making more recipes.

Great book! Love the food and easy to follow recipes. I also like the hints and tips and the history/reason behind each recipe. Very happy with this purchase

I have an older model 4qt. pressure cooker that I bought off qvc years ago. I have a few tried & true favorite recipes that my family loves & several IP cookbooks with great, tasty looking ideas. So when I saw the Everyday Mexican cookbook, I immediately bought it, because who doesn’t love Mexican? Well, let’s see - the book is full of recipes, yay! The chapter layout makes sense, ya know, vegetables, rice, soup, type of meat, etc. There’s a regional map of Mexican Cuisine with an explanation of how each location plays a role in the different types & styles of dishes. Recipes are labeled for lifestyle & diets. And the author includes a descriptive blurb with each recipe as well. But the only pictures in the book are generic looking dishes that lie on the page dividing each chapter. For example, one page is a number of individual chili’s lying on a flat surface. Wow. One page is a bowl of soup, woo. One page is a bowl of rice pudding. I was grateful for the label on that one or I would have thought it was oatmeal. At the beginning of the Sweets & Desserts chapter! Sure, I can google each recipe to see what it is, but pictures are what draw you in & get your attention, especially when you’re not sure what something is or even what it’s supposed to look like when made right. So, I have a book of what I hope are great recipes. But I’ll be honest with ya - I have no idea what more than 90% of these dishes even are. And my taste buds are just not excited by a whole bunch of words. Ya know that saying, “a picture is worth a thousand words”? Well, that definitely applies to cookbooks.

This cookbook is exactly the way Mexican food should taste! It's Perfect! Easy recipes! LOVE IT!!!!

This is a fun book thst helped teach me how to master my IP and feed my Columbian husband too. Tasty, simple and educational.

Good selection of recipes

I live in central Mexico and just got and InstantPot, so I was looking for ways to use it to create authentic Mexican food. I was a little skeptical at first, because I worried that these would be primarily Tex-Mex recipes (which are excellent!), but they include very authentic dishes from across Mexico. I've prepared some of the recipes for my Mexican friends, and they have nothing but raves.

Really great recipes. I did struggle to get some ingredients in the UK but in most cases the book have other options.
