. . . to point out that the Miso masters who did this are perfectionists. Every jar I've bought has been uniformly smooth and very flavorful. It has a special "alive" taste I find in the best of fermented foods. No stimulants in this product, but it is somehow invigorating. Bon appetit folks!

I bought this miso and mirin from the same manufacturer Ohsawa. Both products are extremely flavorful, work well together, and add that something, which most homecooks' Chinese and Japanese dishes are missing. The something we can never figure out why our dish does not taste like the one at the restaurant. A little miso goes a long way and can over power other flavors. Even though the miso has reduced sodium, using a large amount will add an unpleasant salty taste to your dish. A little is marvelous; too much, not so.

My friend has a soy allergy so I wanted a miso that did not contain soy for a recipe I'm making. Ohsawa Yamaki Miso came up at the top of my search for "miso without soy". There was no picture of the ingredient list but the label said 'brown rice' so I ordered. The jar just arrived and the 1st ingredient listed is soybeans. I thought, oh well, I can't make the recipe but I'll just return the jar. BUT come to find out that this item is not eligible for a return so I'm out $18. Pretty expensive mistake...BE CAREFUL BEFORE YOU ORDER!!!

Spectacular miso from Japan. Only one to compare is South River Miso from Conway, Massachusetts, also great.
