Does anyone have trouble keeping the enso hd knives clean? the pits from the hammering seem like they might be hard to wipe clean...

I have owned this knife for approximately 9 months and have had no issues with keeping it clean. The pits are not as deep as they look in the picture. I absolutely love this knife, and it is scary sharp.

How do you sharpen it? 12deg is not the typ 10deg asian angle and not the 14-15deg western angle.

I use wet stones, this knife is so well sharpened that I’ve only had to use the wet stones twice this year. I’m a home cook and not a professional, so the angle of sharpening for me doesn’t have to be perfect. Hope this helps
