Is a replacement module available?

I sincerely doubt it... pretty sure you have to buy a new one.

My knives as Wusthof, which have a 14 degree bevel. I've already ordered this... Will this still do a good job despite being 15 degrees?

We had knives at a different degree as well, don't remember if it was 14, but did an excellent job.

How thick a knife will this sharpen?

We have a wide variety of kitchen knives in length and thickness and it handles them all with no difficulty. Unless you want to do machetes you should be okay.

Will this work with Shun boning knives?

I use this sharpener on every kind of knife I own with the exception of serrated knife blades. I really like this sharpener and I have had it for a few years now. I use it once a week on three very long chef knives and every other on a dozen or so smaller knives. I would say yes, you can use this with a Shun Boning Knife.
