Question 1

Why does mine stain so easily?  It has lots of brown stains on it after only a dozen or so uses.

It is the nature of the beast.  I have an older one that is all nice and brown...I will pull THAT one first to use rather than my newer ones.  I am patiently waiting for the newer ones to brown up too.  I guess my thought is...it is kind of like a cast iron pan....they "cure" themselves.  I use these pans for EVERYTHING...from cookies to French fries to meat items.  If you were used to using darker "new" pans, you probably never noticed them curing themselves too, due to their dark color consistency.  It is just the nature of the beast.  There is nothing wrong with the pans themselves.

Question 2

I have a set of these Doughmakers products and I have loved them. However, after 10 years they are getting a dark gray film or powder that comes off on my hands. Has anyone had this happen? Is there a way to save my cookie sheets?

It's called oxidation. Aluminum will do this over time; putting them in the dishwasher hastens the process due to the harshness of the detergent. I have 30-plus-years-old cookie sheets (not Doughmakers brand) and I just wipe them with a damp paper towel before each use.

how deep is it ?

The pan is about 1 inch deep. It has a pebble grain texture and is a delight to use. I do not use vigorous scrubbing when cleaning it in order to retain the finish. If something is stubbornly stuck to the surface, it is better to soak it in vinegar overnight and use a soft brush to dislodge any stuck food.

what is the gauge of the "Heavy gauge aluminum" there are numbers that are more decriptive than heavy dose anyone know the gauge number???

I would like to add that I have been using Doughmakers cookie sheets for at least 15 years also and I LOVE them.  I have never greased them and they are still as shiny as when I bought them, and my cookies never stick.  The sheets have not warped at all.  When I bought them I really questioned whether or not they were worth the money, but after all these years the answer is unequivocally YES!  I am buying two for my daughter who is moving out on her own, and I told her if she takes care of them they should last a lifetime.
