How do you mount this to the sink? I have everything installed, but there doesn't appear to be a way to keep the faucet in place.

This faucet is very poorly designed. It has two threaded studs with two corresponding wing nuts and a "c" shape washer. The problem is that there is not enough room for the wings to turn which makes installation very difficult if not impossible. I'd rarer use another faucet type that has a single large nut in the center. Replace the faucet if you can. If not , use regular nuts instead of provided wing nuts: very inconvenient, but works.

Can the mounting plate be removed? I need a longer mounting plate on my sink.

yes,the cover can be removed easily
