can you adjust the overall height?

Yes I think you can slightly as you put a sleeve onto the pole before sliding the "shelf/top" on and where the sleeve is lock's it into place. However you can't lower it by very much and it would seem a little pointless

Can you take it down again easily?

Yes but keep the box and leave the wheels attached, I had no probs and it's stored away ready for next time I use it. Hope this was helpful

Are you able to buy a cover for it to protect it from dust?

Not sure, but it certainly lends itself to accommodate a cover.. we actually use the top run for towels.

Is this easy to unassemble? Or how can I loosen the shelves to breakdown for storage?

Yes, its easy to disassemble. You might need a hammer though to help knock the shelves off . I've disassembled mine by myself, and I'm a petite 72 year old woman. No problem,.
