What's the real difference between this vs. using your oven's broiler or simply throwing your sous vide steak into a hot cast iron pan?

Mainly, what this attachment gives you over a cast iron pan or a broiler is the ability to see the food as you sear it, allowing you to more evenly sear your food. where it really shines is for food that's a lot harder to sear evenly in a pan, such as chicken, fish, roasts, cheese or other round or uneven foods. Another key advantage is you can use it where you do not have access to a full kitchen - camping, catering, etc.

How can I install it on top of my propane tank?

How big is it actually? I'm not sure how much space it will occupy in my kitchen.

Im not sure the noozle size etc is the right one, what size of torch nozzle is it suitable for?

It is the same size as a propane torch. Fits any standard propane bottle. I think the gas nozzles are pretty much standard globally, it has a small screw to tighten it on.
