It's is not the fine grain that blows all over the tank. All crushed coral and sand around 1-2mm

Can you store this sand for some time if not used right away? Will it go bad on you? Does it have an expiration date?

The sand itself will not go bad but the bacteria will go bad after about 12 months of manufacturing. Most life sand bags have a expiration date on them.

I currently have a two year established tank with the fine Fuji pink and so badly want to change to this.. what’s the best way?

In small sections at a time. There are some great tutorials on YouTube. Be very careful. Unless of course your just going to start over. Clean out tank and redo. But in that case your tank would no longer be established. Don’t clean and use old filters and that’ll help with starting the cycling process over. That way it won’t be completely restarting at zero.
