Is it too small for a 6 years old?

yes; my 6 year old could get into it but could not turn or move in it,

What has everyone used for their kiddos to color it with? Washable markers? Crayon? Any insight on what might work best?

The cardboard is corrugated, so crayons (and to a lesser extent colored pencils) tend to leave vertical stripes of darker color where you have the inside layer. Markers look better, but we have done acrylic paint and poster board paints too with good results.

I wonder if you could attach two of these today to make it large enough to fit a mattress inside ?

I don't think the cardboard is that sturdy. As it is a foldout design, roof support would be lacking. Sorry, just a guess but I am doubtful this would work.
