what bags do you recommend using that would fit around the bucket and still leave enough space to snap this on?

Any bag shod be fine. I just used a standard garbage bag but I put some paper towels in there to help absorb any moisture.

How about fitting a Blue Lowes 5 gal Bucket?

Fits a Blue Lowe's bucket perfectly! We stacked 2 blue Lowe's buckets together and attached the lid to raise the height to a more standard size toilet level.

will it fit 7gal bucket

It should fit if the top diameter of your 7 gal bucket is the same as a 5 gallon bucket.

I hate that the lid doesn't go all the way back and out of the way. It always leans against my back (ewww). Is there a fix, or a different lid/seat?

Mine went back to it's original (too high) position next time I used it, but now I just stretch it back once before I use it, and it doesn't get me. Seems that weakening the plastic by stretching it a lot made it so it will stay back for a little while now. 
