I usually make 2 lbs of bread dough at a time. How much should go into this? 1 lb? 2 lb? Less? More?

The recipe that comes with the New England Hot Dog pan calls for 3 cups of flour which is average for 1-1/2 Lbs of dough and the yield is 10 buns. Easy and delicious.

is this pan good for harvest/artisan free form breads? I am considering this pan rather than a covered clay baker.

I used it for home-made bread because i like my bread to look big and this pan is large and broad. I guess you could use it for free form breads too.
