Nutritious and delicious
I've been using Anthony's Tiger Nut Flour for more than a few years now as I am gluten free. It pairs well with Cassava if you're on the AIP-Paleo diet. It does have lumps which you need to mash out. I believe that's normal and it hasn't bothered any of my recipes. I like that it's a legume and more nutritious than a lot of alternative flours.

Great tasting gf flour
Wonderful flour. I made pancakes and waffles and they were so good. Sweet flavor without adding sweetener. Also added some of this to a gf cookie batter and it was yummy.

My Favorite Tigernut Flour
This is my favorite Tigernut flour. I have tried many different brands but I love the texture of this one best. It’s a little gritty, but not too bad. I eat an AIP diet and buy a lot of Tigernut flour as a grain-free and gluten-free option for my meals and it tastes great, I don’t even miss the regular flours. Whenever I cook with it every recipe turns out great. I love that it’s organic and that I can order it with my subscriptions when it’s in stock too!

Good flour for gluten-free needs, though a rather grainy texture.
Appalled to find myself gluten-intolerant after all these years (it's really because in the U.S. we still allow poison Round-Up to be sprayed on our grains!!!--in Europe they're smart enough to outlaw that stuff!), I'm always searching for alternative flours to bake or cook with. After getting over the initial gails of laughter over the name (i.e., how many tigers sacrificed their nuts for this?), I was happy to incorporate it in with other gluten-free flours. It's rather grainy, but has its uses, especially as breading for fried onions or other vegies. Maybe not so much for cakes (which you should really avoid all that sugar anyway!!)
