I purchased this syrup thinking that it would be an easy-to-use substitute for egg whites in cocktails that benefit from a foam layer on top. In reality, the foam you get from Vargas Gomme Syrup is minimal at best — it is certainly not as thick or enduring as using real egg whites. Sure, it adds sweetness, but at a much higher cost than plain simple syrup. My first bottle will also be my last.

Ok, I know that this is just a simple syrup that I can make at home. However there's something about it that is beats any simple syrup I've made. I don't know what it is, but it is. At the price it is an expensive luxury. Maybe get my next on at Christmas.
