The Best Meringue Powder
Chefmaster Meringue Powder is an excellent product! Having the option to purchase a larger bag is a game changer for my sugar cookie business. I use this meringue powder to make royal icing, and I consistently achieve perfect results. For many years, I struggled to create the ideal royal icing, but this meringue powder is amazing. It produces a truly white, puffy royal icing that is a decorator's dream. I absolutely recommend Chefmaster Meringue Powder! Here's the royal icing recipe I use: - 8 cups powdered sugar - 1 cup room temperature water - 3 tablespoons corn syrup - 6 tablespoons meringue powder - 2 teaspoons powdered vanilla To prepare, add all the ingredients to a mixing bowl. Start the mixer on low speed (1 or 2) to incorporate the ingredients. Then, increase the mixer speed to medium and mix for 5 minutes. (This step is crucial, so make sure to mix for the full 5 minutes!)

So good, but better if you sift it first
I love ChefMaster’s meringue powder. I used it previously, then switched to something more local before going back. It’s consistent, I don’t notice as many air bubbles as I do with something others, it’s tasty and structurally sound. My sole complaint - I’ve had to start sifting before using. I do a lot of detail work and my piping bags would frequently plug up. I started sifting the meringue powder when making royal icing, and I’m left with some larger pieces that seemed to be clogging. I’ve not had issues since. It’s one extra step, but so far I keep doing it because the result is so good.

Good taste but not sure I will try again.
I dabble in cookies so I decided to try a new meringue powder and went with this one. It did the job but I noticed some small crystals in the icing every time I used this. The taste was great but for me I think I am going to stick to a brand I can pick up at the local grocery store.

Something has changed
I have been using Chefmaster Meringue Powder for years and I used to be very pleased with the results. Recently however, I’ve been experiencing issues when mixing. I now keep getting clumps in my royal icing, I’ve noticed that when first mixing the powder and water, it’s not fully incorporating and it’s clumping. Not sure if they changed the formula along with the packaging but I know my results are not what they used to be and that’s disappointing.
