I wanted to make poultry stock after Thanksgiving. I added the turkey carcass plus about six chicken carcasses I had in the freezer. Then I loaded it up with vegetables and seasonings and filled it to the brim with water. After I filtered all the solids, chilled the liquid, and removed the fat on top, I still had nearly two gallons of rich golden bone broth. As an added bonus, clean-up was a breeze. Heat had obviously been evenly distributed because there were no hot spots to scrub. I love, love, love this stockpot! Highly recommended!
