What do I do when my packets have crystallized? How can I get them to liquify again?

You can try to liquefy by placing the honey packets inside a plastic bag, remove as much air out of the bag as possible, seal it and place bag in warm water. Please do not microwave because they have a foil liner. Crystallization is the natural progression of real honey - https://www.naturenates.com/honey-turned-solid-its-real/

What are the measurements in length and width of each packet?

Each honey packet measures 3.5" tall by 1.75" wide

Who certifies that these are organic? What organization has certified these?

This particular product is not organic. It is raw & unfiltered but nowhere does it say organic. Nature Nate’s Organic Honey has a green label, not orange.

How many carbs per packet?

Each honey packet has 8g of carbs (3% daily value).
