Can you change the backlight color? Or is it always set to the rainbow color?

It depends on the color of the product you choose. K1 white / K1 black stays rainbow color. K1 pink has 7 colors backlight ( not rainbow), and pressing Fn + tab can change it to solid color.

how do I turn the keyboard off or ON. What key is it??

Hold down the FN key then hit the ESC key to cycle through the options. There’s 4 bright, dim, pulse, and off
