Q: I made bagels with 6 cups flour. They weren’t chewy. How much vital wheat gluten should I add to make then chewy?

You might try exchanging 1 or 2 cups of flour with the gluten flour. I would not exchange more than that at first. I have made bread with almost 100% gluten flour but not bagels. Gluten is the protein part of wheat flour so should be chewy. Hope this helps.
