Good bonding knife
Great little boning knife, especially at the price.Shaving sharp out of the box, but with a fairly robust feeling blade. Easy to get in between bones and take meat off.Handle is nice and grippy.Probably wouldn’t be very good for other use (eg vegetables), but I have other knives for that…

Very sharp and easy to use
It's nice owning a great quality boning knife. This Mercer has made trimming different cuts very easy and precise. I've used it about a dozen times this month and it's still holding a good sharp edge. Handle has a great ergonomic shape and grip.
