How accurate can I measure items? If I use more than one cell does the accuracy improve or degrade?

This type of cell, which is 50kg half bridge will provide a typical accuracy of 50 to 100g with a maximum range of 200K for 4 cells. Adding more cells will increase the maximum load and decrease accuracy.

What is the output format from the hx711 ad weight module? is this an i2c output? if so what's the address?

The output is not IIC, it is SPI

Is there a way to get the 80 hz sample rate that the hx711 should provide (according to the datasheet) if the rate pin is set to high?

You need cut the PIN 14 of the chip to get 80 HZ

I just bought these for a project. What two opposing points get pressure applied to measure strain? I suspect it needs the rivets to be clear?
