How far away can the freq source be?

It's dependent on source output power. I mainly use it for verifying ENG wireless microphones during press check-ins. Don't typically get a reading until under 20" away from the TX source.

Does it come with both the vhf and uhf antena?

This unit comes with (1)one 5" universal antenna that seems to cover the vhf/uhf frequencies very well, it even works well down to 72 MHz (model aircraft radio) not so much at 2.4gHz range.

Could I use this to find out Hz vibration plate vibrating at?

This item only picks up RF frequencies. Vibration plate is an audio wave form I believe? You would need a sound wave sensor to see the frequency such as a Accelerometer. This is a sensor that measures the dynamic acceleration analyzer of a physical device as a voltage & frequency.
