Best for the price
I am a chef. Using Mercer 8" knives at my work at the past five years. Ergonomic, easy to use for many things. If you look after the blade stays sharp for long time. Super light. Cheap. I recommended this knife for so many commis chefs already.

Excellent and ferociously sharp
The heft and solidity of this blade is well above average, and it holds its edge extremely well. The balance is good and favours the blade vs. the tang quite noticeably. I've used it daily on all manner of meat and tough veg, and still no need to even give the edge a honing. It's obviously not a boning or paring knife, so is not great for finer work, but as an everyday chopper and veg knife, it's brilliant.

Slices meat like butter
As the rest of the comments say I ended up cutting everything I could find. Including, as it turns out, the tendon of my thumb. Surgery and weeks of hand therapy later I still think its the best knife I have ever owned. Its so sharp, I'm now scared of it.

Great bargain for a chefs knife
This knife is as good or an equal to the Victorinox Fibrox or the Wusthof Pro Cooks or Zwilling /Henkels Twin master chef knife but at a fraction of cost of the others. My knife was razor sharp out of the package and I found the shape and design was excellent for a pinch grip while slicing and dicing vegetables. I did buy a knife edge guard to protect the sharp edge for storing in my kitchen drawer. I've have been using this knife for a couple of months now and it has kept its sharp edge like when it was new. Definitely would recommend it to anyone who is looking to buy a chefs knife that won't break the bank while giving top notch performance.

Great knife for the price. purchased for restaurant use.
I bought this as a cost effective knife for work in a high volume restaurant.. (Our knives are dogged. We were down to one good chef knife. owner likes to buy junk. i.e. farberware.) On it's second week of heavy use and not a problem yet. (Knife has seen a few rides through the dish machine.) If you cook, you know how to use this knife. it's a standard chef knife. It's not heavy (I prefer heavy, but the weight of this is ok for me.) and was almost razor sharp when I got mine. (Which, if you know knives.. this doesn't last forever. but the edge is holding thus far. few runs through the ceramic sharpener and it's good to go.) As for the edge? it's not a soft edge. you will chip the edge if you clank it on steel. (common sense) It has a flat edge for about 2/3 of the blade. then curves to the tip. (I hate rounded edge/rocking blades.. can't chop finely with them. Can see the blade in the picture, represents it perfectly.) It's NSF certified. comes clean easily. Held up to the grease of our restaurant just fine thus far. Handle has a good grip and I like the angle of the handle. Mine does not have the rust spot problem some other reviewers mentioned. (And it's been through the dish machine and left sit over night) I'd recommend this knife as a decent beginner knife for the home cook or a cheap knife for a restaurant kitchen. (line cook, prep cook, etc.) Will fit either bill. I mentioned home cook because you should avoid the inferior knives you buy at walmart and most department stores. Usually find farberware and other overpriced garbage. I have had the knife for 2 months now and still as functional as It was new.

Great knife! Sharp and comfortable!
I have many knives in varying price ranges. I'm a chef and I leave my Japanese knife at work so it's always there, and was looking to replace it (before it grows legs) with something a little less pricey and more easily replaceable. At around 18 dollars, I was quite surprised at the quality of this knife. The molded handle fits nicely in the hand, and there are rubber grippy things on it for when you're getting messy. I was almost afraid of the edge, as it was so sharp I took a patch of hair off my arm like a razor. I love everything about it, especially the entry level price. I'll be ordering another one for the house, as I'll be taking this to work to put it to work. The only box I can't check just yet is its ability to hold an edge. Not a huge issue for me as I have sharpening tools, it's just a matter of how often I have to hone or sharpen it, but for those who use their knives until they can't cut butter, could be a bigger issue. So that remains to be seen, but I sure enjoyed cutting up an onion into slivers last night. The only thing it doesn't do, and this is hard to explain, some knives almost "fall through" the item you are cutting, because of weight. This knife is fairly light and you'll have to contribute to the effort made by the knife to get through difficult projects. 5 stars and I'm getting another! *update- Ive now used the knife at work every day for several months. That is a lot of use. Each time I pull it from the drawer I run it over my steel, and that just lets it be its sharpest. Ive also noticed that there are several ways to grip it, one of my favorite it to gently grip it and just let my 4 fingers lift the handle, then push downwith my palm, it really helps prevent fatigue and cramping. You'll really enjoy this knife. 3 of my friends have purchased one after trying it.
